I see less to no blood in the meat when ikejime is done. Salt water is better if available because it has a lower freezing temp and doesn’t wash out the meat (see #3). Work around the entirety of the gills and cut every place where it is attached. It’s amazing how much better a well-bled fish tastes over a fillet that hasn’t been bled properly.
