I made the stuffed eggplant version a few weeks ago for meal prep for the week. the Saucy Moroccan Spiced Lentils recipe includes Tomato Paste and paprika. super yummers! Make a batch of the Moroccan spiced lentils at that amount (6 servings) as this recipe requires that amount. Xo. I ate it with millet, which made it feel more international. Made this exactly as written except didn’t have fire roasted tomatoes so used “Mutti ‘mai vista una pulpa così’ brand”. We loved it served over rice, but it would also be delicious over quinoa, steamed greens, roasted vegetables, or cauliflower rice. I substituted canned tomatoes with 2 fresh Marglobe tomatoes. This is the first time I have successfully roasted eggplant. I did not have fresh cilantro, so I added 1/2 teaspoon dried cilantro when I was adding the cumin and smoked paprika. I want to follow your stuffed eggplants recipe for 4 persons. xo. 1 Prepare the eggplant: Slice the eggplants into 1/4-inch to 1/2-inch thick rounds. After reading so many positive reviews I had to give this recipe a shot! xo. Should be easy to find something still très delicious, as the French would say. I sautéed the pepper, onion and garlic for the lentils. I did the roll up method so was a bit more work but totally worth it. I used a whole can of chickpeas (rather than just a cup) and also added about 1/2 Tbsp coriander because I love it and 1 Tbsp lemon juice stirred in with the tomatoes. This grilled eggplant salad with chickpeas and tomatoes by Amy from Veggies Save The Day is perfect for the summer! The chickpeas are really bland so I’d omit those next time :). This would make the perfect dish for slow weekend dinners, or you could make it ahead of time to enjoy throughout the week!
