I start with the 1000 if I don't need to fix any chips and it's wonderful. I tried smoothing it out with a nagara then a rust remover. The fine grits such as this one are especially amazing for essentially two reasons: they don't soak up water, so they don't have to be ponded like water stones, and they stay flatter and don't wear as fast as water stones. These stones are beautiful and will provide a lifetime of service. a must have in a set of shapton stones.
