 It’s a bit sourer than sumac, so add less amchoor than the amount of sumac asked for in the recipe. The sumac takes the bite away from the onion, so it's mild, but still doesn't taste like a cooked onion. I use smooth sumac which is similar to staghorn except the berries are smooth without the “hairs”. Notes: Also provides Zatar, Penzeys Spices
